Vince, Philly-born style, has been teaching cooking classes at Pritikin since 2007. He believes that healthy eating can be both delicious and simple, often telling his students, "If you can chop, you can cook!" His students enjoy the flavorful results of his lessons, such as Seared Salmon with Arugula, Mushrooms, and Balsamic Vinegar, Salad with Carrot, Pineapple, and Fresh Mint, and Mango Parfait. Despite being low in sodium, sugar, and fat, Vince's dishes are bursting with rich flavors. With experience gained from Johnson and Wales University and various restaurants across the country, Vince finds his current work at Pritikin most fulfilling. Hearing guests say, "I can do this! I like what I'm eating! You've saved my life!" is a constant reminder of the impact he makes and a source of unwavering joy for him.
