Preheat large skillet or wide pot on medium heat for 5 minutes; spray with cooking spray oil once hot
Sauté onions, peppers, carrots until translucent; then add garlic and ginger
Once garlic and ginger begins to brown, add all ingredients except chicken
In a separate preheated pan, spray oil
Season chicken with All Purpose Seasoning and sear in skillet
Once brown, add into hot stew pot
Bring everything to a rolling boil then reduce to a medium simmer, covered for at least 30 minutes
Bring back to a boil, thicken with corn starch
Finish with fresh herbs
