Yucca, also known as cassava, is a Latin American root vegetable with a potato-like flavor and texture that is very absorbant, so it easily takes on the flavor of any other ingredients combined with it when baked, boiled, or sauteed. Mojo is the signature marinade of Cuba.

Yucca
1quartwater
1poundyucca rootpeeled and cut into wedges
1tablespoonsoy sauce, low sodiumlow-sodium
1/2teaspoonblack pepperfreshly ground
Mojo
1/2cupgarlicminced
1/2cup onionpeeled and diced
3limesjuiced
1/4cupcilantroleaves picked and chopped
2tablespoonsItalian parsleyleaves picked and chopped
1/2jalapenoseeded and thinly sliced
Instructions
Yucca
In a large pot, bring the 1 quart of water to a boil, and add yucca wedges, soy sauce, and black pepper. Boil till yucca is soft, about 20 minutes. Drain and keep hot.
Mojo
Blend all Mojo ingredients in a food processor until smooth. Spoon over yucca wedges.
