Broccoli Quinoa Patties 2 cup cooked red quinoa 8 cup broccoli florets steam al dente 2 cup carrot, dice fine steam al dente 3 tb grated parmesan 1 cup egg beaters 1 cup panko bread crumbs 4 tb fresh parsley chopped 2 tb fresh basil chopped 2 tb fresh dill chopped 2 tb roasted garlic 4 tb roasted shallots 2 tb all purpose seasoning 1 tb lemon pepper salt free Creamy Lemon Basil Sauce 1/2 cup Italian parsley 1/2 cup basil 4 u lemon zest and juice 1 tb dijon 1 tsp minced garlic 1/2 cup apple juice concentrate 2 tb cider vinegar 2 tb green grotto 1 tb Mr Dash seasoning ground 1.5 cup fat free sour cream
Broccoli Quinoa Patties Pulse broccoli in food procedure for 20-30 seconds
Puree roasted shallot and garlic with egg beaters
Combine all ingredients in bowl and mix thoroughly
Spray sheet pan with Pam and portion mix with ice cream scoop for fast, consistent sizes
Press the balls down to form a patty/burger shape
Bake at 375 F for 10 minutes, flip them and cook for 10 more minutes
