Chayotes, also known as “vegetable pears,” are related to zucchini, cucumber, and melons, and actually taste like a combination of the three. Native to Mexico, they are very high in vitamin C and fiber, and very low in calories. Each serving of our Chayote Slaw is just 28 calories. Chayotes can be eaten raw, like our slaw, or cooked.
* To peel chayotes, you’ll probably want to wear disposable gloves or peel them under cold running water, as they often ooze a slightly sticky substance. Though completely nontoxic, it may irritate sensitive skin. Slice the skin off with a regular vegetable peeler, rotating while peeling, as you would a potato.
