2cupscherry or grape tomatoesCut into halves OR use one 15-oz can of crushed tomatoes
3/4cupvegetable stock (low-sodium)
3tablespoonsfresh Italian parsleychopped
Instructions
Season chicken with chili powder, garlic powder, onion powder, Pritikin® All-Purpose Seasoning, and salt-free lemon pepper.
Pre-heat large nonstick sauté pan over high heat. Lightly mist hot pan with nonstick cooking spray, such as PAM.
Reduce heat to medium-high and sear chicken breasts for 3 minutes per side.
Add lemon juice and tomatoes to pan. Turn chicken breasts again and add vegetable stock to pan. Reduce heat, cover, and simmer until chicken is fully cooked, about 8 to 12 minutes.
Transfer chicken to plates. Top with tomatoes and sauce. Sprinkle with parsley and serve.
