Instructions
Cook Red beans until just soft in 3 cups water.
In a separate stockpot sauté peppers, onion & garlic until brown.
Add So-Soya and no salt spice mix and cook for 3 minutes
Add all ingredients except veggie topping and cilantro and simmer for 1 hour.
Serve with whole wheat pita chips, brown rice, mashed potato or by itself
