Here’s chicken salad with sass – and healthy to boot! Cook up a quick and hearty side like a yam, baked potato, or brown rice, and dinner’s on the table. How easy!
In a medium-hot skillet, sauté onion and garlic until glossy.
Season diced chicken breast with Pritikin All-Purpose Seasoning and curry powder.
Add chicken to onion and garlic. Cook at medium heat until done, about 8 to 10 minutes.
Remove. Let cool before adding pineapple, yogurt, and pepper, to taste.
Serve on a bed of shredded lettuce.
