vegetable stock or de-fatted chicken stock

red pepper

garlic

enrico's mild salsa

tablespoon
parsley or cilantro
chopped

teaspoon
soy sauce (lite)

vegetable oil spray (fat free)
Instructions
Combine rice, stock and beans in rice cooker set on medium.
Lightly mist skillet and saute onion, peppers and tomato until tender.
Add garlic and salsa, reduce temperature and simmer for 5 minutes.
Add to rice cooker.
When the bell rings on the rice cooker, add soy sauce and parsley.
Serve hot
