Rutabaga Soup

Ingredients
  

  • 12 large rutabaga peeled & large dice
  • 6 leeks white only chopped
  • 2 cups garlic
  • 1 cup shallots
  • 1 head fennel chopped
  • 1 bunch thyme picked & chopped
  • 10 potato peeled & diced
  • 3 gallons water
  • 1 teaspoon black peppercorns ground
  • 1 teaspoon salt
  • 1/2 gallon soy milk
  • 1 cup milk (evaporated fat-free)

Instructions
 

  • Bring all ingredients to a boil except soy milk & milk.
  • Simmer for 1 hour.
  • Puree and add the two milks.
  • Serve Hot
