panko bread crumbs

minced garlic

parsley
chopped

Dijon mustard

fresh spinach
chopped fine

onion
chopped

cup
red bell pepper
chopped
Instructions
Take cap off mushrooms
Toss with ½cup white balsamic and ½ cup apple juice concentrate
Sear on flat top or skillet for 1-2 minutes; until slightly caramelized
Sauté onion, pepper and garlic until brown
Add spinach and let wilt down
Flake apart tofu and add to the rest of ingredients
Mix well
Fill mushrooms with mixture
Bake at 350 degrees for 15-20 minutes
