Stuffed Mushrooms
Materials
- 16 mushrooms (white buttom) large
- 1/2 lb tofu silken
- 1/4 cup panko bread crumbs
- 1 tsp minced garlic
- 1 tb parsley chopped
- 1 tb Dijon mustard
- 1/2 lb fresh spinach chopped fine
- 1 cup onion chopped
- 2 cup red bell pepper chopped
Instructions
- Take cap off mushrooms
- Toss with ½cup white balsamic and ½ cup apple juice concentrate
- Sear on flat top or skillet for 1-2 minutes; until slightly caramelized
- Sauté onion, pepper and garlic until brown
- Add spinach and let wilt down
- Flake apart tofu and add to the rest of ingredients
- Mix well
- Fill mushrooms with mixture
- Bake at 350 degrees for 15-20 minutes
