Poached Halibut in a Vegetable Broth

Materials
- 1 pound halibut cut into 4-oz portions
- 2 cups snow peas julienne
- 8 ounces bean sprouts
- 2 red pepper de-seeded & julienne
- 1 red onion peeled & julienne
- 1 cup carrot julienne
- 4 tablespoon garlic sliced
- 1 tablespoon ginger minced
- 1 tablespoon lemon zest
- 3 cups vegetable stock
- 1 cup sherry
- 3 tablespoons cilantro chopped
Instructions
- In a Large skillet add all ingredients except cilantro.
- Cook covered over low heat for 6 minutes.
- Uncover add cilantro and cook for 2 minutes more.
- Serve over black rice
