Matzo Ball Soup

Materials

  • 1/4 cup garlic chopped
  • 1/2 medium onion dice
  • 1 medium carrots dice
  • 2 medium stalks celery dice
  • 1/2 leeks white only chopped
  • 1 teaspoon paprika
  • 1 teaspoon oregano , dry
  • 1 tablespoon thyme picked & chopped
  • 1.5 quart roasted chicken stock de-fatted
  • 1 tablespoon fresh dill
  • 1 teaspoon parsley chopped
  • 8 Prikikin Matza Balls (see recipe)

Instructions

  • Sweat all vegetables with paprika, oregano & thyme.
  • When onions are translucent add chicken stock.
  • Bring to boil, then simmer for 1 hour.
  • When ready to serve add matzo balls, dill & parsley.
