Balsamic Poached Salmon
The strong flavors of balsamic, garlic, and cilantro stand up well to salmon. Serve this dish hot for dinner, or, if you're entertaining, as a superb cold appetizer sliced into bite-sized servings and curled in a lettuce leaf or atop whole-wheat, low-sodium crackers.
Yield: 6 servings
Materials
- 1/4 cup vinegar balsamic
- 1/4 cup fresh garlic minced
- 1/2 red onion minced
- 1/4 bunch cilantro leaves picked and chopped
- 1 tablespoon apple juice concentrate
- 1 1/2 pounds wild salmon cut into 4-ounce portions
Instructions
- In a small bowl, mix all ingredients together except salmon.
- Place salmon in baking dish, and pour marinade over salmon. Let marinate for 1 hour. Meanwhile, preheat oven to 350 degrees F.
- Bake salmon till just cooked through, about 8 to 15 minutes, depending on thickness.
- Serve cold or hot.
