This salad is proof positive that healthy food can be as enticing to the palate as expensive red wine! You’ll love this recipe’s complex blend of citrus, licorice-flavored fennel, tropical mango, red onion, and snappy stone ground mustard.

Materials
- 1 grapefruit (supreme)
- 2 oranges (supreme)
- 1 bulbs fennel julienne
- 3 mangoes peeled & julienne
- 1 red onion julienne
- 1 red pepper julienne
- 1 green pepper julienne
- 1 carrot julienne
- 1 teaspoon jicama sliced
- 1 pound mixed greens
Citrus Herb Dressing
- 1 tablespoon mustard (low sodium stone ground)
- 1/4 cup rice wine vinegar
- 2 tablespoons apple juice concentrate
Instructions
- Convine all vegetables in a bowl
- Add Citrus Herb Dressing to vegetables and let marinate for 5 minutes
- Serve on a bed of mixed greens
