Italian White Bean & Spinach Stew
Yield: 20 people (8 oz portions)
Materials
- 1/4 quart white wine
- 1/2 qts red onion finely diced
- 1/4 cup garlic chopped
- 1/2 qts red bell pepper sliced
- 15 tomatoes Roma (fresh & seeded) finely chopped
- 1 quart white beans cooked
- 1/4 cup balsamic vinegar
- 1/4 cup soy sauce (lite)
- 1/4 cup black pepper
- 1/2 cup basil (fresh) chopped
- 3 pounds spinach fresh picked & sliced
Instructions
- Cook the onion, garlic and red pepper in white wine for about 10 minutes.
- Add the tomato and white beans.
- Mix well and cook for another 20 minutes, stirring occasionally.
- Add spinach.
- Serve hot
