Jamaican Red Beans

Materials
- 2 cups red beans (dry) soaked overnight
- 1 gallon water
- 2 tablespoon thyme leaves
- 1/2 cup vidalia onions raw-chopped
- 1/2 cup garlic minced
- 2 bay leaves
- 1 teaspoon oregano , dry
- 1 whole chilpotle pepper
- 1 boniato peeled & diced
- 1 plantain peeled & diced
- 1 taro peeled & diced
- 2 cups calabaza peeled & diced
- 1 tablespoon soy sauce, low sodium
Instructions
- Boil beans with thyme, onions, garlic, bay leaves, oregano, & chilpolte until beans are almost soft.
- Add remaining ingredients
