Matzo Ball Soup

Materials
- 1/4 cup garlic chopped
- 1/2 medium onion dice
- 1 medium carrots dice
- 2 medium stalks celery dice
- 1/2 leeks white only chopped
- 1 teaspoon paprika
- 1 teaspoon oregano , dry
- 1 tablespoon thyme picked & chopped
- 1.5 quart roasted chicken stock de-fatted
- 1 tablespoon fresh dill
- 1 teaspoon parsley chopped
- 8 Prikikin Matza Balls (see recipe)
Instructions
- Sweat all vegetables with paprika, oregano & thyme.
- When onions are translucent add chicken stock.
- Bring to boil, then simmer for 1 hour.
- When ready to serve add matzo balls, dill & parsley.
