Meatless Meatballs with Fresh Tomato Sauce

Materials
MEATLESS MEATBALLS
- 1 pound meat substitute
- 1 cup bread crumbs (whole-wheat)
- 1/2 teaspoon black pepper ground
- 2 teaspoons oregano (dry)
- 2 teaspoons fresh basil leaves chiffonaide (cut into thin strips or shreds)
- 1/2 onion minced
- 1/2 cup egg beaters
FRESH TOMATO SAUCE (serving size: About 1 cup)
- 8 large tomatoes
- 1/4 cup onion diced
- 1/4 cup garlic chopped
- 1/2 teaspoon oregano (dry)
- 1/4 teaspoon black peppercorns ground
- 1/2 teaspoon basil (dry)
- 1 teaspoon Splenda
- 1/4 bunch fresh basil leaves chiffonaide
Instructions
MEATLESS MEATBALLS
- Mix all ingredients together.
- Mold into balls.
- Bake at 350 degrees for 25 minutes.
FRESH TOMATO SAUCE
- Cut, grate, or puree tomatoes, as desired.
- Brown onions and garlic.
- Add tomatoes, oregano, and pepper.
- Cook over medium heat until thickened, about 40 minutes.
- Finish with Splenda and fresh basil.
