Okra Soup
Okra Soup
Yield: 8 8-ounce servings
Materials
- 1/2 onion diced
- 1 red pepper diced
- 1 teaspoon fresh garlic minced
- 2 tablespoons fresh parsley
- 1/2 cup vegetable broth
- 2 cups tomato juice (low sodium)
- 2 cups vegetable broth
- 1 tablespoon apple juice concentrate
- 2 tablespoons soy sauce (low-sodium)
- 3/4 pound okra
- 1/2 teaspoon lemon juice
Instructions
- Saute onion , red pepper, garlic and parsley in vegetable broth for 5 minutes.
- Add tomato juice, vegetable broth, apple juice concentrate and soy sauce.
- Bring to a boil.
- Add okra and lemon juice and allow to simmer at low temperature for 40 minutes.
