Materials
SALAD INGREDIENTS
- 3 heads Boston lettuce cleaned & chopped
- 1 bunch basil picked & sliced
- 1 bunch mint picked sliced
- 1 bunch parley picked & chopped
- 2 bunch arugula cleaned & sliced
- 4 tomatoes diced
- 2 cucumbers peeled & diced
- 2 yellow peppers diced
- 2 cups croutons (whole wheat)
LEMON VINAIGRETTE INGREDIENTS
- 12 lemons juiced
- 1 cup cider vinegar
- 1 bunch parsley chopped
- 4 cloves fresh garlic
- 2 tablespoons oregano (dry)
- 2 cups water
- 2 tablespoons apple juice concentrate
- 1.5 tablespoons Dijon mustard
Instructions
- Mix all ingredients and divide equally among 12 plates serve with lemon vinaigrette
