Quinoa Salad

Materials
Quinoa Salad
- 1.5 cup red quinoa cooked
- 1.5 cup white quinoa can substitute millet
- 1 cup cucumber diced
- 1 cup carrots grated
- 1 cup green onions minced
- 1 cup green bell peppers minced
- 1 cup red bell peppers minced
- 1 cup yellow grape tomatoes halved
- 1 cup red grape tomatoes halved
- 1/2 cup Italian parsley minced
- 1/4 cup cup dill minced
- 1/4 cup basil minced
Zesty Italian Dressing
- 1/2 cup white wine vinegar
- 1/4 cup lemon juice
- 1/2 cup apple juice concentrate
- 1 tsp granulated onion
- 1 tsp granulated garlic
- 1 tsp dry basil
- 1 tsp dry parsley
- 1.5 tsp dry oregano
Instructions
Quinoa Salad
- Mix all ingredients and refrigerate.
Zesty Italian Dressing
- Combine all ingredients in blender and run until smooth.
Notes
Add xanthan gum to thicken the dressing as necessary.
