Red Beans Con Grio

Materials
- 2 cups beans (kindney or pinto) cooked
- 2 cups brown rice uncooked
- 4 cups vegetable stock or de-fatted chicken stock
- 1/4 cup red pepper chopped
- 1/4 cup green pepper chopped
- 1/4 cup tomato diced
- 1 teaspoon garlic minced
- 1/4 cup enrico's mild salsa
- 1 tablespoon parsley or cilantro chopped
- 1 teaspoon soy sauce (lite)
- 1 vegetable oil spray (fat free)
Instructions
- Combine rice, stock and beans in rice cooker set on medium.
- Lightly mist skillet and saute onion, peppers and tomato until tender.
- Add garlic and salsa, reduce temperature and simmer for 5 minutes.
- Add to rice cooker.
- When the bell rings on the rice cooker, add soy sauce and parsley.
- Serve hot
