Aloha Chicken Recipe
Aloha Chicken

Materials
- 1 lb 1 inch chunks chicken
- 4 cup onions peeled & diced
- 2 cup carrots peeled & diced
- 2 cup red bell pepper peeled & diced
- 2 cup poblano pepper peeled & diced
- 2 cup pineapple peeled & diced
- 3 tb garlic minced
- 2 tb ginger minced
- 3 tb Dijon mustard
- 3 tb green grotto
- 1/4 cup balsamic vinegar
- 1/2 cup apple cider vinegar
- 1/2 cup orange juice concentrated
- 1/2 cup apple juice concentrated
- 2 tsp Mrs Dash ground
- 2 tsp salt-free lemon pepper
- 2 tsp dry oregano
- 2 tsp dry basil
- 2 tsp salt-free curry powder
- 2 tb lower sodium soy sauce
- 2 qt chicken broth, low sodium
- 2 tb cilantro fresh, added at the end
- 4 tb parsley fresh, added at the end
Instructions
- Preheat large skillet or wide pot on medium heat for 5 minutes; spray with cooking spray oil once hot
- Sauté onions, peppers, carrots until translucent; then add garlic and ginger
- Once garlic and ginger begins to brown, add all ingredients except chicken
- In a separate preheated pan, spray oil
- Season chicken with All Purpose Seasoning and sear in skillet
- Once brown, add into hot stew pot
- Bring everything to a rolling boil then reduce to a medium simmer, covered for at least 30 minutes
- Bring back to a boil, thicken with corn starch
- Finish with fresh herbs
