Asian Tofu Stir Fry
Yield: 4 people
Materials
- 1 cup tofu diced
- 2 tablespoons sesame oil
- 1/2 cup asparagus sliced
- 1/4 cup red pepper julienned
- 1 red onion sliced
- 1 tablespoon garlic chopped
- 1 tablespoon ginger root chopped
- 1 cup shiitake mushrooms sliced
- 1/2 cup bean sprouts
- 1 cup snow peas sliced
- 3 tablespoons scallions snipped
- 1 tablespoon low sodium soya sauce
- 1/2 teaspoon basil
Instructions
- Saute garlic, onion and gingerroot in sesame oil for 1 minute.
- Marinate tofu in soya sauce.
- Add asparagus, red pepper, onion, and shiitake mushrooms to sauté and cook for 2 minutes.
- Finish off with bean sprouts, snow peas, scallion, and basil.
