Materials
Broccoli Quinoa Patties
- 2 cup cooked red quinoa
- 8 cup broccoli florets steam al dente
- 2 cup carrot, dice fine steam al dente
- 3 tb grated parmesan
- 1 cup egg beaters
- 1 cup panko bread crumbs
- 4 tb fresh parsley chopped
- 2 tb fresh basil chopped
- 2 tb fresh dill chopped
- 2 tb roasted garlic
- 4 tb roasted shallots
- 2 tb all purpose seasoning
- 1 tb lemon pepper salt free
Creamy Lemon Basil Sauce
- 1/2 cup Italian parsley
- 1/2 cup basil
- 4 u lemon zest and juice
- 1 tb dijon
- 1 tsp minced garlic
- 1/2 cup apple juice concentrate
- 2 tb cider vinegar
- 2 tb green grotto
- 1 tb Mr Dash seasoning ground
- 1.5 cup fat free sour cream
Instructions
Broccoli Quinoa Patties
- Pulse broccoli in food procedure for 20-30 seconds
- Puree roasted shallot and garlic with egg beaters
- Combine all ingredients in bowl and mix thoroughly
- Spray sheet pan with Pam and portion mix with ice cream scoop for fast, consistent sizes
- Press the balls down to form a patty/burger shape
- Bake at 375 F for 10 minutes, flip them and cook for 10 more minutes

- Blend all ingredients until smooth
