Butterscotch Pudding
Butterscotch Pudding is a delicious treat, but one usually full of unhealthy ingredients. Indulge your sweet tooth with this fan favorite, and without the guilt.

Materials
- 1 medium sweet potatoes
- 1/4 cup reduced fat cream cheese fat-free is preferred
- 1/4 cup maple syrup
- 3/4 cup Greek yogurt (fat-free plain)
- 1/4 teaspoons vanilla extract
- 1/2 medium lemon juiced
Instructions
- Wash and wrap potatoes with foil while still wet
- Roast at 400F for at least one hour or until potatoes begin to caramelize
- Cool potatoes completely and peel skin
- Combine all ingredients in blender and puree until smooth
- Allow a few hours in the refrigerator to thicken more
