Chili with “ground beef”

Ingredients
  

  • 1/4 cup bell pepper diced
  • 1 cup ground so-soya soaked in 1/2 cup hot water
  • 1 cup onion (red) diced
  • 1/2 cup garlic chopped
  • 3 tablespoons Green Grotto
  • 1/2 cup corn kernels
  • 3 cups red beans cooked
  • 2 tablespoons Pritikin A.P. spice mix (no salt)
  • 2 teaspoons oregano
  • 1 teaspoon basil
  • 1 teaspoon chilli powder
  • 2 teaspoons paprika
  • 1/3 bottle enrico mild salsa
  • 1 tablespoon balsamic vinegar
  • 1/2 tomato puree (no salt)
  • 1 cup veggie juice (no-salt added)
  • 1/2 cup carrots medium diced
  • 1/2 cup tomato diced
  • 1/4 teaspoon liquid smoke

Instructions
 

  • Cook Red beans until just soft in 3 cups water.
  • In a separate stockpot sauté peppers, onion & garlic until brown.
  • Add So-Soya and no salt spice mix and cook for 3 minutes
  • Add all ingredients except veggie topping and cilantro and simmer for 1 hour.
  • Serve with whole wheat pita chips, brown rice, mashed potato or by itself
