Chili with “ground beef”
Materials
- 1/4 cup bell pepper diced
- 1 cup ground so-soya soaked in 1/2 cup hot water
- 1 cup onion (red) diced
- 1/2 cup garlic chopped
- 3 tablespoons Green Grotto
- 1/2 cup corn kernels
- 3 cups red beans cooked
- 2 tablespoons Pritikin A.P. spice mix (no salt)
- 2 teaspoons oregano
- 1 teaspoon basil
- 1 teaspoon chilli powder
- 2 teaspoons paprika
- 1/3 bottle enrico mild salsa
- 1 tablespoon balsamic vinegar
- 1/2 tomato puree (no salt)
- 1 cup veggie juice (no-salt added)
- 1/2 cup carrots medium diced
- 1/2 cup tomato diced
- 1/4 teaspoon liquid smoke
Instructions
- Cook Red beans until just soft in 3 cups water.
- In a separate stockpot sauté peppers, onion & garlic until brown.
- Add So-Soya and no salt spice mix and cook for 3 minutes
- Add all ingredients except veggie topping and cilantro and simmer for 1 hour.
- Serve with whole wheat pita chips, brown rice, mashed potato or by itself
