Grilled Fish with Baby Kale
Yield: 5 people
Materials
- 5 large swai fillets or other mild white fish
- 1 large package kale (baby)
- 2 cloves garlic minced
- 2 limes zest and juiced
- 1 handful cilantro (fresh leaves)
- pepper to taste
- cooking spray oil non-stick
- rice (whole grain) cooked
Instructions
- Preheat your grill. Lay out 5 large pieces of aluminum foil and lightly spray with non-stick cooking spray. Pile on each foil in order: large stack raw baby kale, 1 piece of fish, lightly pepper, sprinkle on a bit of garlic, the lime zest, a small squeeze of lime juice and a sprinkling of cilantro.
- Repeat for all 5 foils.
- Wrap them up tight and place them on your grill.
- Grill approximately 15 minutes, or until the fish is firm, white and flaky. Serve over whole grain rice!
