Grilled Ratatouille

Materials

  • 1 pound shiitake mushrooms reconstituted in hot water
  • 4 large zucchini thickly sliced
  • 3 yellow squash thickly sliced
  • 2 red onion thickly sliced
  • 3 japanese eggplant thickly sliced
  • oregano, red wine vinegar, and ground celery seeds to taste

Instructions

  • Season vegetables with black pepper, freshly chopped rosemary, dry oregano, red wine vinegar, and ground celery seeds
  • Grill and lay out to cool
  • When cool, dice all vegetables and serve
