Grilled Ratatouille

Grilled Ratatouille

Ingredients
- 1 pound shiitake mushrooms reconstituted in hot water
- 4 large zucchini thickly sliced
- 3 yellow squash thickly sliced
- 2 red onion thickly sliced
- 3 japanese eggplant thickly sliced
- oregano, red wine vinegar, and ground celery seeds to taste
Instructions
- Season vegetables with black pepper, freshly chopped rosemary, dry oregano, red wine vinegar, and ground celery seeds
- Grill and lay out to cool
- When cool, dice all vegetables and serve
