Lentil & Pineapple Salad
Yield: 8 portions 1/2 cup size
Materials
Salad
- 3 cups lentil cooked and drained
- 1 cup pineapple finely diced
- 1/4 cup red pepper finely diced
- 1/4 cup basil chiffonade OR mint
Salad Dressing
- 1/4 cup white vinegar balsamic
- 1 tablespoon garlic chopped
- 2 tablepoons onion chopped OR chopped shallot
- 3 tablespoon apple juice concentrate
- 1/4 teaspoon xanthan gum
Instructions
Salad
- In a bowl combine all ingredients and toss well.
Salad Dressing
- Combine all ingredients in a blender and blend for one minute
- Pour over salad and mix well
- Chill and serve
