Orange Parfait
Yield: 4 people
Materials
- 1/4 cup orange juice concentrate
- 1/2 teaspoon vanilla extract
- 4 4 ounce scoops ice cream vanilla (sugar free) OR fat free sour cream whipped with Splenda
- 1/4 cup orange segments
Instructions
- In a small sauce pan, reduce orange juice concentrate and vanilla extract to half the amount you started with
- In 4 parfait glasses pour equal amount of orange reduction
- In each glass put one scoop of ice cream. Use a teaspoon to gently press down ice cream. The orange juice concentrate will float to the top. Garnish with orange segment and mint. Serve immediately
- If using fat-free sour cream, whip reduction and vanilla with sour cream (reserving 1 tablespoon full for garnish)
- Fill each glass with mixture, garnish with orange segment and mint, then drizzle remaining reduction on top
