Pan Seared Salmon in Roasted Red Pepper Sauce

Materials
Pan Seared Salmon
- 4 4 ounces salmon (wild)
- 1 tablespoon Pritikin Fish Seasoning
Roasted Red Pepper Sauce
- 2 cups red pepper fire roasted
- 1/2 teaspoon garlic chopped
- 1/2 onion diced
- 1/4 cup white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon pepper fresh ground
- 1/2 tablespoon oregano (dried)
Instructions
Pan Seared Salmon
- Season fish with Pritikin Fish Seasoning on both sides
- In a medium hot skillet sear fish on each side for 3 minutes
- Remove from the flame and rest in skillet for 2 minutes then serve. (Salmon should be slightly pink on the inside)
Roasted Red Pepper Sauce
- Saute onion and garlic; add roasted red pepper and oregano and sauté for an additional 5 minutes
- Put all ingredients in a blender and blend for 2 minutes. Poor over salmon and serve
