Parmesan Artichoke Fries

These crispy, flavorful fries are baked to perfection and topped with a light sprinkle of Parmesan, offering a guilt-free treat that’s both nutritious and delicious.
Parmesan Artichoke Fries
Yield: 4 people
Materials
- 10 pz artichoke bottoms cut into half inch strips/fries
- 2 tsp granulated onion
- 1 tsp paprika
- 1 tsp granulated garlic
- 1 tsp lemon pepper salt free
- 1 cup egg beaters
- 1/2 cup oat flour
- 1 cup potato flakes
- 2 tb grated parmesan
Instructions
- Steam artichoke bottoms for 3 minutes
- Allow to cool
- Season artichokes with spices
- Dredge artichokes in flour, then egg, then potato flakes/parmesan
- Place onto sheet tray that has been sprayed with cooking spray
- Lightly mist the breaded artichokes and bake at 350F for 10-15 minutes or until golden brown

Serve with Buffalo, BBQ, Marinara sauce or any of your favorite sauces.
