Spicy Zucchini and Corn Soup
Materials
- 6 cup zucchini chopped
- 3 cup yellow onion chopped
- 2 cup corn kernels
- 3 tb garlic minced
- 2 cup potatoes peeled and chopped
- 2 qt vegetable broth low sodium
- 2 tsp Mrs Dash ground
- 3 tsp Lemon Herb Blend
- 4 tb Green grotto
- 1 tsp dry oregano
- 1 tsp dry basil
- 1 tsp coriander
- 2 bay leaf
- 2 tb fresh thyme leaves
- 2 tb fresh dill added at the end
- 2 tb fresh parsley added at the end
- 1 cup fat free sour cream added at the end
- 1/2 cup low fat cream cheese added at the end
- 1 tb grated parmesan cheese added at the end
Instructions
- In a large stock pot sauté onion and zucchini for several minutes until translucent; add garlic and cook until caramelized
- Add all remaining ingredients except dairy, parsley and dill; cook for about 1 hour over medium flame
- Add dairy, parsley, dill and blend
