Zucchini & Garbanzo Salad
Yield: 12 people
Materials
- 2 zucchini julienned (cut into long thin strips)
- 2 yellow squash julienned
- 1 red onion julienned
- 1 red pepper, julienned
- 1 carrot peeled and julienned
- 4 lemons juiced
- 1/2 bunch dill chopped
- 1 tablespoon coriander
- 1 tablespoon paprika
- 1/4 teaspoon black peppercons ground
- 1/2 cup water
- 6 ounces garbanzo beans cooked and cooled
Instructions
- Mix zucchini, squash, onion, lemon juice, dill, coriander, paprika, pepper, and water together.
- Let marinate for 1 hour.
- Sprinkle each salad with one-half ounce of beans.
